Spinach

Selection: Spinach has broad, dark green leaves that can be smooth or slightly crinkled. The leaves grow in a rosette form and can vary in size from small baby spinach leaves to larger mature leaves.

Preparation: Spinach is incredibly versatile in the kitchen. It can be eaten raw in salads, blended into smoothies, or cooked in a variety of dishes such as soups, stews, and sautés. It is also commonly used in dishes like spanakopita and quiches.

Good for you: Spinach is highly nutritious, rich in vitamins A, C, and K, as well as folate, iron, and calcium. It is also high in antioxidants, which help protect the body from oxidative stress.

And tastes so good: Spinach has a mild, slightly sweet flavor when young, and a more robust, slightly bitter taste as it matures. The texture is tender and slightly crisp when raw, but it becomes soft and silky when cooked.
