Spaghetti Squash
Selection: Colour should be Light Yellow.Stalk should still be attached.
Preparation: Cut lengthways in half. Scoop out any seeds. With a drizzle of olive oil and 45 minutes in the oven, the squash will transform into Spaghetti like strands.
Good for You: Provides fibre, vitamins A, some Bs including folate, and C; calcium, magnesium, phosphorus, potassium, and a little iron and zinc.
Good pasta alternative: Once cooked, Spaghetti squash is scooped out, and naturally forms spaghetti like strands
Storage: Keeps 1-2 weeks in pantry, or another dry cool location. Once cooked, cover and put in fridge. Should hold up to 5 days max.
