Selection: Should appear fresh and bright with no moisture in package.
Preparation: Wash, cut into pieces, scoop out seed and peel. If peeling is in the too hard basket, cook with skin on and paper thin skin will come off easily when cool.
Good for You: Has Vitamin A, beta carotene, several B & E vitamins, significant calcium and potassium and lots more trace minerals.
