Selection: If bagged there should be no residual moisture visible. If unwrapped check for a firm head no browning, and protective outer leaves.
Preparation: Outer leaves are useable if not too coarse. Remove and fold with inner leaves, rinse and spin or dry, slice with a very sharp knife to prevent bruising or tear.
