Selection: Bulb should be firm and colour consistent. As always the fresher the better.

Preparation: Separate cloves with knife or similar. Use garlic crusher or flatten with knife to remove skin and slice into salt; can be cooked whole according to use.

Good for You: Another of those mystical, good health vegetables. Reputed to keep away colds (and demons!)

And Tastes So Good: Whether a seasoning for soups, curries, stir fry, or roasted whole as a sweet caramelised vegetable in it’s own right, garlic is a must in every kitchen.

Storage: Keep dry – your fruit bowl will do.
