Chinese Daikon
Selection
Choose daikon that is firm, smooth, and heavy for its size with crisp, fresh-looking leaves (if attached). Avoid roots that are soft, cracked, or have blemishes.
Preparation
Wash well and peel if desired. Slice, grate, julienne, or dice depending on your recipe. Daikon can be enjoyed raw in salads and slaws, pickled, roasted, stir-fried, added to soups, or steamed.
