Cucumber – Telegraph

Selection: Look for vibrant green and even colouring.

Preparation: The skin should be mild and tender so peeling is not necessary. Wash and slice or quarter and cut into chunky pieces.

Good for You: Cucumbers supply Vitamin C and are a good source of fibre.

And Tastes So Good: Mostly served raw as a salad accompaniment but can also be made into a cool refreshing soup, or hollowed out to be filled with a savoury mixture.

Storage : In warm part of fridge in summer; at room temperature in winter. Use promptly.
