Selection: Should look fresh and be dry.
Preparation: Wash thoroughly and cut to even size.
Good for You: Contains carbohydrate, fibre, is s good source of potassium, magnesium, folate, Vitamins B1, B6, B12, phytonutrients and Vitamin C.
And Tastes So Good: These make an interesting potato salad with mayonnaise and chives and/or boiled eggs, lightly cooked peas or whatever takes your fancy.
