Selection: Should be vibrant, well shaped, and have firm shiny skin.
Preparation: Halve and remove seeds and inner membrane. Use as is or place skin side up under grill or BBQ until blistered and blackened, put in plastic bag, cool, then skin should peel off.
Good for You: Supplies Vitamin A, is high in C, some of B group and potassium.
And Tastes So Good: As with red or green but somehow has that extra interest so use for garnishing and raw where possible.
