Selection: Skins are maroon and should be clear, firm, and smooth.
Preparation: Peel and cut to required size.
Good for You: Contains folate and dietary fibre; an excellent source of beta-carotene, vitamins C & E.
And Tastes So Good: Steam, stir fryroast; use in warm salads. Peel and wrap individually in foil dusted with chilli, cumin and salt; leave on BBQ for 20 minutes, turning now & then. Serve with squeeze of lemon or lime.
